Update: Caboose has put his official seal of approval on the bread! I also used the same flour mix to bake him a batch of his favorite peanut butter cookies. I really think the tip about refrigerating the cookie dough before baking was a huge success! I simply rolled out the balls of dough, put them on the cookie sheet and stuck them in the refrigerator for a couple hours, then criss-crossed them with the tines of a fork and baked, as usual. The GF cookies looked and tasted exactly like their original wheat counterparts!I believe the "thumbs up" Caboose gave me while stuffing them into his grinning mouth was a good sign! Now, Mom, what about your Black Bear Brownies, hint hint. I may have created a monster!<br />

Weighing the flours when creating this mix is non-negotiable, in my opinion. It gets the proportions right. I bought a kitchen scale for less than $10.00 at Wally World and use that. <br />
When using this mix, you can SPOON the mixture into a measuring cup and lightly level it off with a knife, but under NO CIRCUMSTANCES do you use the cup to scoop it out! Packs the flour down too much and you will end up with a paperweight!<br />

I've been dabbling in Gluten Free for a while, now. At first, it was just a lark, to vary our diets by using some of the healthier, ancient grains like Teff, Millet and Quinoa. Avoid notorious "manufactured and altered franken-food". Not a fad, I've been cooking from scratch for a VERY long time, now. Just learning more as I go along.<br />
My first attempts using alternate grains produced some tasty, if crumbly,Teff peanut butter cookies. Quinoa Pudding was a hit, made like a rice pudding. Next, I produced some pretty tasty millet waffles! And almond flour pancakes, too! Yeah, that's right, I ground the flours myself in my trusty coffee bean grinder! The Pilot loved them, as did the Monkey. (truthfully, she sweetly says "Mmmm"-even if she grimaces- no matter what we stick in her mouth.) But, they were moist, crispy on the outsides and sweetened with real maple syrup, and they were Mmmmmm. I froze waffles and Caboose would enjoy them for a hurry up breakfast, as well.<br />
<br />
Now, anyone who knows me knows I like to bake, especially bread, Our favorite family recipe is a "Sourdough" bread, made with yogurt! I make quite a few variations of it: plain, savory, cheesey and whatever the variation, it doesn't last long around here! But horror stories of GF bread disasters kept me from even attempting them. So, I didn't. <br />
<br />
Then, the unthinkable happened! Caboose, after suffering for quite some time, was recently diagnosed with gluten intolerance! We immediately told him to go with grilled meats and fish, (no breaded anything and yes, that includes those potato crusted fishsticks!) fruits and veggies, until we could figure something out.<br />
<br />
Yeah, right. This is a full time, working, college kid, who lives on sandwiches, pastas, cereal, and burritos and whatever healthy frozen meals I would send home with him. Occasionally, he would cook, but 60 plus hour weeks often precluded such frivolity.<br />
<br />
Since gluten is snuck into almost everything, it is very frustrating for him to try grab something on his 30 minute lunch break.What was he supposed to do, ask for a burger without the bun? No spaghetti?????? But he's ITALIAN!! Meatballs without the pasta is almost heresy! Wait, meatballs have breadcrumbs in them??? Say it isn't so!!! Salads without the croutons or crackers??? Check the salad dressings for included flours??? HUH??? I ask you, how long can a young man live on rabbit foods? <br />
But, remember,I said this guy can cook! In fact, he's a GREAT cook, when time permits. He just needs to learn to do it a different way, now. He needs to heal and he's willing to try whatever.<br />
The question was asked: Can I help him?<br />
<br />
So, my lark has now become a journey in earnest to figure out how to really do this thing right! Foods he likes, created from scratch, that will heal and nuture him now, and in the future. Things he can make ahead, eat on the run, etc. I accepted the challenge.<br />
<br />
Brave Caboose is my guinea pig. He tries everything I attempt. He loves the GF version I created of our families homemade granola. That was easy. He happily microwaves my instant cinnamon/apple "GF oatmeal packets", which I have been making him for years. Just make it with certified GF oats, now. Uh, huh, some oats are NOT certified gluten free. Ok, that fixed the cereals issue.<br />
<br />
Homemade GF Chex mix was a hit with him, especially when I sprinkled on cheesy nutritional yeast! (I didn't tell him what it was until AFTER he tried it). That replaces the croutons and crackers for salads. And makes a nice crunchy snack as well. Heh-heh. This isn't so hard, now, is it?<br />
<br />
I made a GF batch of my famous Gringa Green chili and he snarfed that as well. Then, the GF tortillas recipe I found resembled pancakes, haha, but he ate them. Dipped them in the green chili. Kinda chewy, but, Ok, so now I'm getting sassy!<br />
<br />
What the heck! Let's try bread, I mean, really, how bad can it be? Famous last words. Full of myself, I made my very first GF whole grain loaf of bread (ok, so what if it resembled a brick, it smelled good). Caboose, always the polite one, tried it, then gently pushed aside the brick, er bread, and said it was a "bit dry". I tried a bite and, Oh my, the horror stories were true! It was bad, with a CAPITOL B. Crumbly, dry, bland and heavy! The wind was sucked right out of my sails!<br />
<br />
So, Caboose continues munching on waffles,and pancake-y tortillas, desperately using them like slices of bread for his packed lunch sandwiches, but, the poor guy misses bread, real bread, and he especially misses MY sourdough bread!<br />
<br />
Then, I had an Epiphany! I decided to try something different. Instead of going with GF Bread/doorstop recipes I found online, I would attempt to modify my own recipes! Everything else I had previously modified came out WAY better! Duh! I researched the chemistry of these flours, their properties,which ones retained moisture, which ones sucked it out, who crumbles, etc. etc. Finally, I found this amazing all- purpose GF flour recipe, plus TIPS on working with yeast breads, on <a href="http://glutenfreeonashoestring.com/better-than-cup4cup-gluten-free-flour-blend-d-i-y-how-to/">http://glutenfreeonashoestring.com/better-than-cup4cup-gluten-free-flour-blend-d-i-y-how-to/</a>. And I only modified one ingredient! Remembering the flour properties and using the provided yeast bread tips, I am proud to say:<br />
Today, I created a GF version of my "Sourdough" Bread!!! AND IT WAS A SUCCESS! Moist, good crumb, tangy, sliced well, freezes well and best of all, it's Mmmmm!!! Caboose will be pleased!<br />

Well, foks, I finally found out the TRUE skinny on our cellphone service. I finally got someone at Verizon to give me the name of their "Partner Network Service", the ones who actually own the cell tower up here in our piece of Heaven. It is Commnet Cellular, local office is in Castle Rock, CO. I spoke with their service people, who were extremely nice, by the way! However, their news was not so nice. They said there were NO PLANS TO EVER UPGRADE OUR TOWER and NEVER WERE ANY PLANS TO DO SO!!!! Despite what Verizon had been saying all these years!!!! So, I made one last call to Verizon. Told them to cancel our service. Of course, they asked the reason and I told them I didn't appreciate being led on all these years with the promise of our terrible 1X service being upgraded "soon". So, we cancelled and took our business to a pay as you go. It's the same terrible service here at home, but at least we are paying half the price as with Verizon! <br />

(This post is written due to the large number of visitors we had, yesterday, commenting on what a great idea this is.)<br />
Yesterday, we had our community wide yard sales. We had a large amount of people from not only our little community, but from various parts of the county and Southern Colorado, as well, come by. This conversation was repeated many, many times, over the course of the day. It went something like this:<br />
<span style="color: red;"><strong>Them:</strong></span> "Your roses are lovely! Such a bright spot amongst all this brown drought! We can't water, enough, at home, our water is too expensive, etc. and all of our flowers and trees are dead or dying. (Pause) Uh, what are those caps sticking out of the ground next to them?"<br />
<span style="color: lime;"><strong>Our reply</strong></span>: "Our Wet Valley is not. Mother Nature has not smiled upon us,as well as a good part of this country, in bringing much moisture to our area. Plus, given the fact that the past few years up here, we have been banned from all outside watering, even for our livestock and pets, our once beautiful area looks like a bunch of dried up sticks and weeds. Even when we don't have the outside ban in place, due to our <u><em><strong>extremely </strong></em></u>high water rates up here in "paradise", not many people are willing to dish out the bucks to pay the <strong><em><u>even higher "penalty rates"</u></em></strong> that come with trying to water our trees just to keep them alive. Victory Gardens are for those lucky enough to have wells, of which we are not among. Even then, last year some of those wells went dry. So, what's a body to do? Well, this body took an ancient tip from the desert dwellers! While researching a couple years ago how to help our trees survive drought conditions, we ran across this information: The desert dwellers would partially bury an unglazed clay pot down into the earth next to their plantings and would put water in the vessel. The water would leach out under the ground, where the plant's roots are, thus providing life giving moisture to the plants, with very little evaporation! So, not having any unglazed clay pots just lying around and wanting to minimize the evaporation of this precious liquid even more, we improvised. We took clean empty jugs, (you know, those stupid jugs they put our milk into and don't disintegrate in 3 lifetimes??) and poked a few tiny holes in the bottom and up around the sides. We used a pushpin. Then, we buried them about 3/4 deep, next to our rose bushes, who were barely dead sticks in the ground. We put some around our fruit trees out back. We stuck some water bottles in the empty flower boxes next to the porch and planted some flowers. Petunias, which have subsequently reseeded themselves and have grown again by themselves! This year, we put some in the middle of a half whiskey barrel and planted some Italian herbs and a midget tomato plant. We fill them with gray water and pop their lids back on. Check them every couple days and add more water as needed. We have our first apples this year, since we planted them 3 years ago!<br />
<span style="color: red;"><strong>Them:</strong></span> "But we don't have a system to use our gray water. Isn't that expensive to modify?<br />
<span style="color: lime;"><strong>Us</strong>:</span> "Everyone can use most of their gray water, without altering their plumbing. The water that comes out of the washing machine is gray water. That is the only modification we have made to our plumbing and hubby did it, himself. It drains into our yard and raspberry bushes on the southside. However, anyone can use the water in the dishpan after you've hand washed your dishes. We put a small bucket in one side of our kitchen sink, and wash our hands over it. That's gray water. We use only natural cleaning products,that we've made, ourselves, so we know none of the "cleaners" will harm our plants. The water from boiling your pasta, from canned vegetables, etc, all is water that your plants will be grateful for!" That water you run down the drains waiting for it to get hot for your shower, THAT is water that can be used! You would be surprised at how it adds up! So, don't dump it down the drain, dump it into your jugs! And enjoy your roses, herbs, etc! <span style="color: lime;"><strong>Nothing like a vine-ripened tomato and some pretty flowers to lift your spirits in these stressful days</strong></span>.</div>

A timely email came my way, this morning. Timely, because we have just been informed that one of our children will be losing their job this year. Her position is being "outsourced" to India. Sure, she's just one of thousands that have become victim to this familiar scenario. Nothing can be done, right? Wrong! With this in mind, here is MY New Year's resolution. Hopefully, it will become one of your resolutions, as well.<br />

At the very least, I will consider purchasing something from an American small business person, who has invested their OWN blood, sweat and PRIDE in the products they offer to us. The United States is rapidly becoming the very first "post-industrial" nation on the globe. All great economic empires eventually become fat and lazy and squander the great wealth that their forefathers have left them, but the pace at which America is accomplishing this is absolutely amazing. It was America that was at the forefront of the industrial revolution. It was America that showed the world how to mass produce everything from automobiles to televisions to airplanes. Millions upon millions of manufacturing jobs have been lost in the same time period. The United States has become a nation that consumes everything in sight and yet produces increasingly little. Do you know what our biggest export is today? Waste paper. Yes, trash is the number one thing that we ship out to the rest of the world as we voraciously blow our money on whatever the rest of the world wants to sell to us. The United States has become bloated and spoiled and our economy is now just a shadow of what it once was. Once upon a time America could literally out produce the rest of the world combined. Today that is no longer true, but Americans sure do consume more than anyone else in the world. If the deindustrialization of America continues at this current pace, what possible kind of a future are we going to be leaving to our children? <br />

Any great nation throughout history has been great at making things. So if the United States continues to allow its manufacturing base to erode at a staggering pace how in the world can the U.S. continue to consider itself to be a great nation? We have created the biggest debt bubble in the history of the world in an effort to maintain a very high standard of living, but the current state of affairs is not anywhere close to sustainable. Every single month America goes into more debt and every single month America gets poorer. <br />

So what happens when the debt bubble pops? <br />

The deindustrialization of the United States should be a top concern for every man, woman and child in the country. But sadly, most Americans do not have any idea what is going on around them. <br />

#5 According to a new study conducted by the Economic Policy Institute, if the U.S. trade deficit with China continues to increase at its current rate, the U.S. economy will lose over half a million jobs this year alone. <br />

#6 As of the end of July, the U.S. trade deficit with China had risen 18 percent compared to the same time period a year ago. <br />

#7 The United States has lost a total of about 5.5 million manufacturing jobs since October 2000. <br />

This morning, 5am, hubby let Seamus out for his "morning constitutional" and BAM! Pepe le Peux was lying in wait and "perfumed" the pup once more. Well, hubby powdered the dog with baking soda, but had to head to work. Normally, I'm very allergic to wet dogs, but I couldn't stand the thought of him having to wait until 9pm for hubby to get home and take care of him. Sooo, I reviewed the shampoo recipe I posted earlier, but decided I had to make a couple changes. Seamus' skin and eyes were still very irritated from his professional bath of Thursday. I really was worried about using Dawn in this bath water. I didn't want to chance it irritating him even more. Here's the recipe I came up with:<br /><ol><li>Mix 1 cup baking soda with 1 cup warm water</li><li>Add 1 tsp liquid castile soap. (I used Dr. Bronner's)</li><li>Scrub mixture into fur. Use a washcloth on the face.</li><li>Let mixture dry on the animal, about 15-20 minutes.</li><li>Rinse with warm water.</li><li>Let animal air dry.</li><li>Sniff and repeat if necessary.</li></ol><p> I tethered the dog, outside, and began bathing him with the mixture. Trying to stay upwind and out of the inevitable shaking to rid himself of the stuff was a challenge, but I succeeded in covering him head to tail with it. I left the concoction on him the first time, for about 5 minutes, rinsed and took a tentative sniff. Better, but decided to repeat. This time, I left the cleaners on him for 20 minutes, rinsed and let him dry. While I was waiting for him to dry out, I made a cup of chamomile tea, diluted it with an additional cup of water and added some essential oil of lavender. Chamomile and lavender both are soothing to the skin. I went back out, sniffed him again and was quite pleased with the results! I gently poured the tea over him and massaged it into his skin. Gasp, choke. That was me and my husband Wednesday night, outside at midnight, shampooing our small dog, Seamus. He'd just had his first encounter with one of our stinkiest neighbors. Pepe le Peux had spectacular aim. Got him square on the head! Knowing that tomato juice never worked against skunk perfume, (previous experience with another dog) we were afraid of getting anything in his eyes. So, we first dumped an entire box of baking soda all over him. Then, using baby shampoo, hubby scrubbed the dog, thoroughly. Even after several washings, though, poor Seamus was still too "fragrant" to come inside and had to spend the night in our enclosed mudroom. The next morning, we called a groomer who urged us to bring him right in. They assured us they had a "skunk shampoo" that would work great! Getting him into his travel crate without getting ourselves stinkified, again, was a challenge. Off to town we went. Seamus in the bed of the truck, hubby and I up front. After several hours, we went to pick our little guy back up. He was in his travel crate and all ready to go. No unpleasant scent to greet us! Woo-hoo! All was right with the world! Or, so we thought... Seamus had a vet appointment, to get his annual vaccines in half an hour. So, we got him out of the crate, put him in the truck with us and started off. However, once he settled down, he looked up at me and I was horrified to see his eyes were blood red and swelling! By the time we got him to the vet's office, his eyes were completely swollen shut and he was in obvious pain. <br />The vet checked him over and determined the groomers had gotten the skunk shampoo in his eyes. It is EXTREMELY harsh, he told us. We felt soooo, bad! He prescribed antibiotic ointment and pain medication! He will be rechecked in a week. If all is well, then he can get his vaccinations.<br />Then, the vet told us what we could use, instead of the harsh skunk shampoos, should any of the dogs encounter a skunk, again.<br /><ol><li> Put a bit of petroleum jelly around the dog's eyes. This will help keep everything out of them.</li><li> Scrub dog down with Dawn Dishwashing Liquid. (Skunk perfume is oily and Dawn works by cutting through it.) Leave the liquid on for about 10 minutes before rinsing dog off. Repeat if necessary. Dry dog.</li><li>Powder the dog with a lot of baking soda. Leave this on for at least 5 minutes. Baking soda absorbs odors off dogs, just like it does in your refrigerator. Brush out and repeat if necessary. </li></ol><p>It has been our experience that when dogs have baking soda dumped all over them, they shake it right off. You do have to hold the dog still while it does it's work. Have a treat handy for him and hang onto your guy until the baking soda has a chance to work. </p><p>The next day, I called the groomer to let them know what had happened to our dog. She assured me that she would speak to the bathers and make certain they were more careful in the future. Trying to make and serve nutritious meals for a pilot husband and a teen aged son can be exhausting! One wants to lose weight and the other, gain it! That one had chicken for lunch, or pasta at the cafeteria, etc. In the past, they relied heavily on store-bought frozen meals to take to work, or eat when they came home late. (Just for fun, take a look at the ingredient lists for those "healthy" meals. Those larger, hungry-guy meals are even worse! Ewwww! And the prices!!) <br />
Well, gentlemen... enough of that! Now, I love to cook, but not knowing when anyone will be home to eat is a problem. The solution? I decided to make my OWN, healthy microwave meals. Here's how I did it:<br />
<ul><li>First, I went to the local super center and purchased some divided containers, with lids. I verified they were microwave and dishwasher safe, first! No point in healthy food becoming contaminated with hot plastic wastes! </li>
<li>Next, I got out our favorite recipes. </li>
<li>I got online to this fantastic website and analyzed the nutritional values, calories and glycemic load of whatever recipes I was going to make. (This site even suggests healthier alternatives for your ingredients!)</li>
<li>I created a shopping list which includes only whole grain products, lean cuts of meat, fish, fresh/frozen veggies, real unsalted butter, etc. No "white" products, i.e. breads, flour, or "fake" stuff like frozen whipped toppings or margarine. I'm a firm believer that if my grandmother wouldn't recognize something as food, DON'T EAT IT! Fortunately, science is now saying the same thing!</li>
<li>Then, I cooked! I made a couple recipes at a time over the course of a couple days. I divided the meals into single servings, placed them into the containers, printed out the nutrition labels available on this website and popped them into the freezer! Now, when my husband catches a late flight or my son is hungry when he gets in at whatever time, there are several choices of meals just waiting to be popped into the microwave. Salisbury steaks, seafood gumbos, mozzarella and basil stuffed chicken rolls, meatballs and pasta....drool. Only 4-5 minutes of heating is required! Can't get easier on them than that!</li>
</ul>Maintaining the meals is simple. I either make an extra serving when the family IS home to eat and freeze it for later, or I make something up whenever I get the urge to cook.<br />

I love this website because I know what everything is that goes into these meals. It's easy to use. I can save my recipes, add my own foods, track and compare. <br />

I love these meals because they are OUR favorites! I can pronounce all the ingredients. I know that my family is getting the heart-healthy whole grains, vegetables and lean proteins recommended by the experts. I control the sodium, the fats, the calories, etc. <br />

Best of all, I have found these meals<strong> </strong><span style="color: lime;"><strong>cost</strong> <strong>me 1/3 the amount</strong></span> of what I previously spent to buy their additive laden grocery store counterparts!<br />
